Super Kale Sauce

A yummy, nutrient-dense sauce that gives you yet another excuse to eat some kale, uses those frozen blueberries you forgot about, and relies on the low-fodmap peanut for some awesome round & roasty undertones.

Vegan or vegetarian, depending on what kind of mayo you want to use!

Ingredients
  

  • 4 Cups Lacinato Kale, 100 g
  • 1/4 Cup Frozen Blueberries, 35 g
  • 3/4 Cup Peanuts, 105 g
  • 1/2 C Cup Water 105 g
  • 1/4 Cup Mayo 55 g
  • 2 Tbs Sweet White Miso 34 g
  • 3 Tbs Lemon Juice 45 g
  • 3/4 tsp Salt 4.5 g
  • 5 drops Stevia

Instructions
 

  • Combine all ingredients in the pitcher of a blender.
  • Blend for a few minutes until as smooth as possible. Adjust seasoning if needed.
  • Pour into a mesh strainer over a bowl, hitting the strainer against the heel of your hand to get the sauce to pass through. For the best texture, do not force the last 1/4 cup or so through – use it as a spread or eat it right now with a spoon.
  • Store sauce in a squeeze bottle or small glass bottle in refrigerator.
